The Epcot Food and Wine Festival has returned to Walt Disney World, and is by far one of Epcot’s most popular events. The festival features nearly two dozen marketplace booths showcasing tasting-size dishes and drinks from around the world. Most countries represented in World Showcase offer marketplaces, as well as many other countries such as South Korea, New Zealand, Brazil, Greece, and more. Access to the festival is included with regular Epcot park admission, but with suc
I find the most magical time of year to be even more magical at Walt Disney World. Our family’s first Christmas visit to the ‘World and seeing it through the eyes of our 6 and 4 year old – both Disney pros by then - is an experience I’ll never forget. The week between Christmas and New Year’s Day is also the busiest all year for Walt Disney World. “Survival” is the word I hear more often from parents considering holiday trips because of the expected crowds, but also because o
It'a almost time for the Candlelight Processional! This is one of the most beloved holiday traditions at the Walt Disney World Resort and no holiday visit to Epcot is complete without it. The beauty of this event is enhanced by the celebrity narrators and I am so excited to announce this years participants! Celebrity Narrators scheduled to make appearances this year include (subject to change without notice): Steven Curtis Chapman

I have to say that Nik and I are really enjoying ourreturn to Norway as we cook our way around the World Showcase. Not only is the food delicious, but we get to relive our entire Norwegian adventure. Have I mentioned that it was the best family trip we've ever taken? Ok, I know I've said that a million times, but it really was. Part of the joy of this adventure is sharing it with you! Here, you can see Nik pretending to be a Viking at the Arkeologisk Museum in Stavanger.
Velkommen til Norge! I am so excited that we have finally reached the Norway Pavilion as we cook our way around the World Showcase! Yes, I know it's the second country you hit if you are working your way around clockwise, but I am excited nonetheless. My family and I were privileged to actually visit this amazing place last summer. While Norway might not be the first place that comes to mind when you think of a vacation spot, if you get the opportunity to go, GO! It is, q
We reached our final day in the Mexican Pavilion and it was a rousing success. The picture might look a bit like dog food I forgot to take the picture before I took the food out of the pan and the plate/placemat color combination isn't the best, but it was delicious. Nik and I made slow-cooker Carnitas and then used the meat to make enchiladas. The end result may not look pretty, but it was a huge hit. Since Bil was home, we got an additional nod of approval. The Carnitas
The cooking adventure continues! Last night Nik and I made Salpicón. Salpicón is a slow-cooked, shredded beef that is used as a filling in tacos, burritos and the like. Although the recipe called for this to be made on the stovetop, I put the beef, garlic, bay leaves and onion in the crockpot and it was amazing! After cooking and shredding the beef, we added the rest of the ingredients and enjoyed the mixture rolled in corn tortillas with avocado. It was truly one of the
We did it! Nik and I started on our Cooking Around the World Showcase journey and we made some really yummy stuff! As you know, since my boy and I are alone all week, we've decided to cook our way around Epcot's World Showcase. Not only do we get to spend some quality time together, we also get to sample some really great culture cuisine. We have started our culinary adventure at the Mexico Pavilion. Last night's creations were Sopa de Hobas and Sweet Mexican Cornbread.
My 13-year-old loves me!
Now that my daughters are at college and my husband is gone all week working in Eastern Virginia, it's just Nik and me most nights. Surprisingly, my 13-year-old son decided that he wanted to make our time together special. I don't know if he likes hanging out with me or is just loving being an only child, but I'll take it! Since my boy loves to cook, we decided that cooking together would be a fun activity. We came up with the idea of cooking a
