I have to say that Nik and I are really enjoying ourreturn to Norway as we cook our way around the World Showcase. Not only is the food delicious, but we get to relive our entire Norwegian adventure. Have I mentioned that it was the best family trip we've ever taken? Ok, I know I've said that a million times, but it really was. Part of the joy of this adventure is sharing it with you! We reached our final day in the Mexican Pavilion and it was a rousing success. The picture might look a bit like dog food I forgot to take the picture before I took the food out of the pan and the plate/placemat color combination isn't the best, but it was delicious. Nik and I made slow-cooker Carnitas and then used the meat to make enchiladas. The end result may not look pretty, but it was a huge hit. Since Bil was home, we got an additional nod of approval. We did it! Nik and I started on our Cooking Around the World Showcase journey and we made some really yummy stuff! As you know, since my boy and I are alone all week, we've decided to cook our way around Epcot's World Showcase. Not only do we get to spend some quality time together, we also get to sample some really great culture cuisine. We have started our culinary adventure at the Mexico Pavilion.
