Join Us For Cooking Around The World Showcase!

My 13-year-old loves me! Now that my daughters are at college and my husband is gone all week working in Eastern Virginia, it's just Nik and me most nights. Surprisingly, my 13-year-old son decided that he wanted to make our time together special. I don't know if he likes hanging out with me or is just loving being an only child, but I'll take it! Since my boy loves to cook, we decided that cooking together would be a fun activity. We came up with the idea of cooking a different national cuisine each week. So, being the Disney nerd that I am, I said, "Why don't we start by cooking our way around the countries of the World Showcase!" He, being ever verbose, said, "OK." So, here we go! Each week, we will be featuring a different country from the World Showcase at Epcot. We will cook 3-5 recipes and I will share the recipes and the results on my blog. Since we always head left when we enter the World Showcase, the first featured country is Mexico! On deck this week are carnitas, sweet Mexican cornbread, agua de Jamaica, salpicón, lentil and cactus soup and sopa de habas. OK, that's six recipes but the agua de Jamaica is a drink so it doesn't really count. :) Check the blog or follow me on Facebook to get all the updates and cook around the World Showcase with us!
